History and characteristics of Burrata

its oldest known origins date back to the beginning of the 20th century in the Murge region of Puglia, around Andria, in the south of Italy.

Following the heavy snowfalls of the terrible winter of 1956, which prevented the farmers in the Andria area from delivering their milk to their usual dairies and cheese factories, the Italian farmer-breeder Lorenzo Bianchino decided to save his production by producing this local artisanal product, consisting of a mozzarella (spun dough) pouch filled with cream (a variant of stracciatella di bufala) and closed with a raffia tie. The local, national and worldwide success of this cheese has made it a flagship product of this region.
